THYME
An evergreen, 25-30 cm high with small, dark green leaves and small pink and white flowers.
The entire plant exudes a delightful and very powerful aroma. Spigs of thyme, either fresh or dried,
are used to flavour casseroles and meat and fish dishes. The whole plant is distilled to produce the
essential oil thymol which is widely used in the production of perfumes, liqueurs and medicines.
